Bacon Crab Stuffed Mushrooms

You know those dinners that are so good that you are picking at it during the whole cooking process…. well Bacon crab stuffed mushrooms is that dish for me. This is a by taste recipe… Alex and our buddy Kellen made this happy creation and now it is a staple.

You can make this as low fat or low carb as you want.

Ingredients-

-Crab legs- chop it up!

-Red pepper- thinly diced…. about one big one.

-Onion-¬† thinly diced…. about the same amount as red pepper.

-Bacon– there is never enough… chop it up!

-Salt and pepper

-Cayenne or red pepper flakes- I like a little kick to it and I am not spicy eater.

-Moisture- We usually use some soft cream cheese and little sour cream- I know not the healthiest but it still is low carb ūüôā¬† You can use mayo, yogurt or even an egg.¬† The cream cheese mix can also be used for a delicious dip. ūüôā

-Parmesan- to Alex it is very important that it is fresh Parm. quarter for in the bowl and the rest for the end.

**Mix all the above and then stuff it into your mushrooms.

We use big portabellas and bake them on a rack to avoid the mushroom getting soggy.

The last few minutes¬†is when you add¬†fresh parmesan¬†on top¬†and put it in the broiler for a few minutes…. it creates a perfect little crust.

Ta daaa…. you have a delicious low carb/low fat however you like dish!

My go to protein bar!

Seems everyone has their go to favorite protein bar/shake to get them through the morning or a good mid day snack or lunch. What I have discovered is that a lot of protein/power bars are filled with carbs,sugar and tons of calories.

Then I found my love of Atkins bars and shakes, they are filled with protein and have very few carbs and calories. They don’t taste chalky or “dietiy” ¬† Like most protein bars. They are a little pricey. I try to purchase them at Target or Walmart since they seem to be almost a $1 cheaper there verse the grocery store. They do have good sales pretty often, so just stock up. ¬†I keep these bad boys with me all the time, so I avoid a “hangery” state lol.

Low carb comfort food | Cauliflower Mash

Ingredients:
1 medium head cauliflower

1 tablespoon cream cheese, softened (optional)

1 tablespoon of half and half or cream.

1/4 cup grated Parmesan

1/2 teaspoon minced garlic

1/8 teaspoon freshly ground black pepper and salt

3 tablespoons unsalted butter

Directions
Boil water over high heat  to then  

Clean and cut cauliflower into small pieces.

Steam cauliflower.about 6 minutes, or until well done.

Drain well; do not let cool and pat cooked cauliflower very dry 

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese (or some half and half),

Parmesan, garlic,

salt and pepper to taste.

Blend until smooth or your desired taste.  

Other ways to mix it up:  try rosemary or cheddar cheese. for a whole new taste.


This dish is key to fulfilling my comfort food craving without eating mass amounts of carbs. This is a superb way to eat low carb and not feel like you are missing out on anything! I have also made mock mac n cheese with cauliflower.. which is delicious!!

Home Workout Essentials and Routines!

At home gym
Having equipment at home can be crucial for those moments you get instant motivation to workout or the days with little motivation to make it all the way to the gym. These are my favorite at home essentials.¬† A lot of my items, I¬† was able to pick up slowly over time for pretty affordable prices. TJ MAX and similar stores have sections with different workout gear on major sale. I got my ab roller for $7 bucks!! I usually get all my workout gear from stores like TJ Max, ross etc. If I can get the same sports bra or workout shorts for significantly cheaper…duh, I am going to. Don’t feel you have to buy everything at once, grow your personal gym slowly. I had only an ab roller, then I bought resistance bands and thanks for a friends ex boyfriend for leaving his kettlebell, I came up on a 20lb kettlebell. There is also the jump rope, it is also a very affordable and small foot print piece of equipment that can burn those calories of quick.
It is important to stay an active healthy babe and that does not mean a certain size or weight but to live a healthy lifestyle and treat your body well because it is the only one you get!
I hate counting so I tend to do my workouts by times.
Try doing each exercise for a minute and if you can’t do a full minute make sure you keep track of your progress.
1 minute each  for 4 rounds.
1. Jump Rope
2.Ab Roller
3.Kettlebell swings
4.Push ups- any style that you do to get them done.
5.Walking squats with  a resistance band tied around your calves. When the resistance band is tied around your legs it provides great resistance. Do different ranges of motion with your leg to reach different muscles in your legs and glutes.
Or try out a at home Crossfit style WOD : My brother is a personal trainer and made this plan for me and I thought what a perfect routine to share!
*** To perfect the moves check out youtube for proper form or to clarify the move. Simply type in the exercise and there is a youtube that is there to help, that I am sure.

Crunchy Roasted Edamame Snack | low carb.

Who doesn’t love to snack‚Ķ I know I do and I try to find healthy alternative to my bad cravings. Here is a healthy low carb crunchy salty snack with my favorite,  Edamame! 

1 (12 ounce) package frozen shelled edamame (green soybeans)
1 tablespoon olive oil or until nicely coated
Sea salt abd cracked pepper to taste and
1/4 cup grated Parmesan cheese. 

Directions

1.Preheat the oven to 400 degrees F
Place the edamame into a colander and rinse under cold water to thaw. Drain.
2.Mix in a bowl the edamame with evoo and seasons and then finish with tossing in the parm. 
3. Then spread the edamame beans onto  baking sheet with parchment paper.
4.Bake in the preheated oven until the they are crispy and golden, about 15 minutes.
5. Lastly and most important,   enjoy hot or cold, your new favorite low healthy low carb babe snack.

Be adventurous and toss in your favorite seasons for a twist on this yummy snack. Try some garlic, basil or even paparika, get fun and creative.

What to think about before moving in together!

That moment when you find yourself paying for essentially a closet at another house while you spend most of your time at your boyfriend or girlfriends house. Then you have “the talk” ¬†you know that should we move in together talk?! Many things can spark this conversations but finances seem to always be on the top of the list. “It just makes more sense to live together and save money than to live separately, when we are together all the time.” ¬†I get it, half the bills and rent is really nice. Along with watching and reading about all the celebrities shacking up and playing house with their loves, it may feel like all signs point to move¬† in together. I have been living with my boyfriend for 4 years now.¬† I have learned a lot and figured I would share. So here are some things to think about and some heads up on how life will change.¬† ūüėČ

  • ¬†Money should not be the number one reason to move in together. It is way more expensive and a much longer process to breakup while living together. I am not saying be negative and prepare for a breakup but just be realistic. I have watched many girlfriends have to live extra days and weeks with ex’s while having to deal with leases and moving out plans. The longer you live together the move you accumulate things together… well who gets the tv? ¬†This is the time to think with your head and not your heart for a minute .
  • ¬†The money talk: have a conversation on what each others expectations are. Is everything 50/50, is one person better with money than the other, whose names will be on utilities and whose duty is to have them paid on time each month? Having an open conversation before hand on these topics will eliminate possible frustration on either end when the situation arises. If one person makes more than the other, does that person have expectations from the other to make it up in other areas?

Once living together you naturally find each others roles in the house. Like I am a total bathroom and bedroom cleaner and Alex is all about the kitchen and living room. Or I buy all shower products, mostly because he would use one product for everything… that is not okay, guys!!

  • Perks: A perk¬† living with your love is you no longer have to do all the annoying house work. Who really likes to take the trash out… NOT ME! ¬†So, for the most part the bf takes the trash out and I dust. You also will always have someone to go home to, to have dinner with and to just be lazy with. You have a built in partner in crime,best friend your Clyde to your Bonnie all without a call or leaving your house.
  • ¬†Routine Adjustment: We all have our favorite little things we do that not everyone else does or even enjoys. For example I use to love waking up and getting my coffee and getting back into bed to watch the news. Well, that came to abrupt stop once Alex moved in. He usually sleeps later than me and finds it too disturbing to the TV on while he is sleeping. ¬†So I had to make a change. One thing I got him to get use to was TV before bed. He use to hate it but now I have got him to a point he likes to watch a show in bed before we fall asleep. Compromise babes!
  • So much stuff: ¬†When Alex moved in, I had a small heart attack because of the amount of stuff he had and how none of it was cute! My nice girly room was all of sudden taken over with BOY STUFF! ¬† I went around saying we need to eliminate this and this and this. Alex at the end of the day said “Stop eliminating all my stuff, I like it” So I grabbed the Jack Daniels rug and explained he can save it in storage for his man cave one day. ¬†Common sense when two people live together they accumulate A LOT and each person has their own belongings that they will not part with… damn squeaky computer chair… ¬†I try to have the rule , something in and something out. ¬†Make sure before moving in together there is enough space! Whose bed will you keep or dresser? Or are you both on the same page as the home decor goes. I am often told when I am decorating, ” don’t forget a MAN lives here”¬† Things to think about…
  • Making Love …Handles: We have all heard of that dreaded freshman 15 pounds but what about the love chub that is gained. Lets be real, living together¬† doesn’t help but my boyfriend is chef. ¬†When we first moved in together it ¬†was like “playing house” and you are both making everything really nice. I was making full breakfast and he was making gourmet dinners and life was great! Until all that eating caught up with me, I ended up gaining about 20 pounds and I was not feeling good about it! We grew up with different kinds of food in the house and going to the grocery store was pretty hilarious and frustrating.¬† We would be debating about what peas were better. It’s the little things I am trying to point out in this post. ¬†I finally made a change and thankfully ¬†Alex being a chef he¬† was able to change his cooking to Low Carb and overall a healthier lifestyle. Keep health in mind because you and your man or woman, want to¬† be a healthy sexy babes forever.
  • Bad Days: ¬†We all have our moments, no matter how perfect the couple. Once you live together there is very little running away that can be done to avoid an argument. Eventually you both have to go to bed or pass one another in the the kitchen. You have to address the issue and have clear communication. Try not to pick up bad habits of going to bed angry or kicking on another out of the bed.¬† Respect each others space at all times but especially during those heated moments. Just because you live together does not mean that you or your partner don’t need alone time or space to think.
  • Be a team! Being a team is the most important! Moving in together makes you two more of a¬† team than ever before. What one person does now in many ways effects the other, from emotions to money decisions. I can’t just pick up and leave, I have myself and Alex to think about. Be each others cheerleaders and biggest supporters. Times get tough and you are essentially riding on a roller coaster trying to stay on the same track through the¬† highs and lows of life together. Live, laugh and love together!

Healthy Low Carb Essentials.

¬†About a 18 months ago,¬†I decided to start the ¬†low carb lifestyle. After gaining some..welll, more than some weight, I needed to take action. The weight gain was ¬†all thanks to my chef boyfriend over feeding me ūüôā . ¬†I knew ¬†low carb was ¬†the easiest ( lets not kid ourselves, it wasn’t always easy to deny pizza and cookies) ¬†and best option for me. Since my boyfriend is a chef, it was¬†easier to pass on the carbs than monitor every little ingredient he uses. ¬†Below is a list ¬†of ¬†healthy low carb products that ¬†I could not survive¬†without. ¬†It is never to late to start being the healthiest babe you can be!

Mission Low Carb tortillas: These saved the day! I love Mexican food and sandwiches, and this healthy option is fantastic. They are super soft and HUGE. I often cut them in half and have a good healthy wrap with some sliced turkey and cheese. Or make some low carb healthy enchiladas with them, even non low carbers with love them.

One carb Heize Ketchup : I love sauce and to dip!!  Compared to 3.76 for 1tbs of  carbs this is a simple 1 carb per 1tbs.  You can still enjoy your healthy bun-less burger or meatloaf with some ketchup!

Cauliflower: I never thought I would eat cauliflower so much but damn it’s good and versatile. From cauliflower mash,puree,faux mac n cheese and rice, makes cauliflower an amazing healthy substitute for carbohydrate filed dishes. I barely eat mash potatoes or regular mac and cheese, because this option fulfills my craving completely.

Spaghetti Squash: As an Italian, I grew up eating pasta, so this was a hard breakup. Thankfully spaghetti squash is a great alternative to the a lot of Italian recipes. I love bolognese  ,low fat Alfredo with mushrooms,spinach and sausage with it or even mock hash browns. Mix it up and I am sure it will win you over. Keep in mind it does take a while to bake, about 45 mins to an hour.

Eggs: I often eat eggs for breakfast and throw in whatever veggies or even left overs I have, in with them. They are high in protein and with taking out a yoke or 2, I am eliminating some fat. I also make them into healthy egg muffins that are quick and easy for the recipe –>¬†Egg Muffins Recipe.¬†I also¬†hard boiled eggs ¬†for snacks or to make deviled eggs with or even an egg salad in a romaine lettuce wrap.

¬†Red Peppers: I am pepper bias, I only really like red ones. I love peppers in and with everything, dip them,sautee them, mix them in salad… you get the point… they are great and great for you.

Quick low carb breakfast bites.

This is a total Babe low carb dish! You can literally throw in whatever ingredients you love or happen to have. I have made them with sliced turkey, sausage, bacon and just veggies. This is a perfect quick breakfast you can save and then pop in the microwave when you are ready. They store very well in the fridge for a few days or in the freezer. Cooking for several days of breakfast. 

Ingredients:

‚Ė™¬†¬† 1/2 pound¬†bulk sausage or Bacon

‚Ė™¬†¬† 12¬†eggs

‚Ė™¬†¬† 1/2 cup¬†chopped veggies of your liking. Such as: onions, pepper, spinach etc

‚Ė™¬†¬† 1/2 teaspoon¬†salt or to taste.

‚Ė™¬†¬† 1/4 teaspoon¬†ground black pepper or to taste.

‚Ė™¬†¬† 1/4 teaspoon of garlic powder or any other seasoning you desire.

‚Ė™¬†¬† 1/2 cup¬†shredded Cheddar cheese

Directions:

1. Preheat oven to 350 degrees F. Lightly grease 12 muffin cups, or line with paper muffin liners.

2. Heat a large skillet over medium-high heat and stir in sausage; cook and stir until sausage is crumbly, evenly browned, and no longer pink, 10 to 15 minutes; drain. Or cook bacon until desired crispiness.

3. Beat eggs in a large bowl. salt, pepper, and whatever seasonings you are feeling. Mix in your protein and cheese. Spoon by 1/3 cupfuls into muffin cups.

4. Bake in preheated oven until a knife inserted near the center comes out clean, 20 to 25 minutes.

Let them cool, then enjoy and store!
